French Onion Soup (vegan)

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 3 onions, sliced
  • 1 portabella mushroom cap, sliced
  • 3 garlic cloves
  • 1 teaspoon thyme
  • 1/4 cup tomato paste
  • 1 cup dry red wine
  • 4 cups vegetable broth
  • 1/4 cup soy sauce (i will probably try bragg's instead)
  • 1/8 cup dark miso (dissolved in 1 c water or stock)
  • 1 tablespoon nutritional yeast flakes

Recipe

  • 1 heat oil over medium heat and saute onions 3 minutes before stirring. cook 20 minutes, or until the onions are well browned.
  • 2 add mushroom, garlic, thyme, and tomato paste. cook 5 minutes, or until the tomato paste turns golden brown.
  • 3 add the wine and scrape the pan bottom, releasing any brown bits. reduce wine as you simmer 2 minutes.
  • 4 add the stock, soy sauce, miso, and yeast.
  • 5 simmer uncovered for 10 more minutes.
