Holiday Broccoli Casserole

Ingredients

- 1 lb broccoli, cut into pieces
- 1 (10 3/4 ounce) can cream of mushroom soup
- 2 large eggs
- 1 cup mayonnaise
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup salted butter
- 4 ounces ritz crackers, crushed (1 sleeve)

Recipe
- 1 preheat oven to 350 degrees.
- 2 steam broccoli for about 7 minutes and transfer to a bowl of ice water.
- 3 mix soup, eggs, mayonnaise, cheese, butter, and pepper in a sauce pan and cook over medium/low heat, stirring constantly, until melted and combined.
- 4 drain broccoli and spread evenly in a greased 9x13 pan. pour cheese mixture on top. top with crushed ritz crackers and bake for 30 minutes.
