Ginger Chicken Soup

Ingredients

- 2 quarts chicken stock, preferably home made
- 6 chicken legs, deboned
- 1 piece ginger, finely diced
- 6 cloves finely diced garlic
- 2 tablespoons butter (optional)
- 1 whole onion, diced
- 1 1/2 cups diced mushrooms
- 2 tablespoons olive oil
- salt & pepper
- 4 tablespoons lemon juice
- 1/2 cup diced scallion
- 1/2 cup diced shallot
- 3 tablespoons soy sauce
- french bread
Recipe
- 1 take the onion,garlic,scallions,shallots,p lemon juice.
- 2 sweat in the butter and olive oil.
- 3 place in chicken pieces and stock and bring to a boil.
- 4 reduce heat and add salt and pepper.
- 5 simmer for 2 hours.
- 6 place in bowl over slice of french bread drizzle olive oil and soy sauce.
- 7 enjoy!
