Healthy Meatball Stroganoff With Brown Rice

Ingredients

  • Servings: 4
  • 1 lb 93% lean ground beef
  • 1 tablespoon olive oil
  • 1 small onions, chopped or 1 cup chopped onion
  • 2 garlic cloves, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups beef broth
  • 1/4 teaspoon black pepper
  • 2 teaspoons worcestershire sauce
  • 2 cups sliced mushrooms
  • 1/4 cup plain fat free greek yogurt
  • 3 cups cooked brown rice

Recipe

  • 1 form ground beef into small meatballs.
  • 2 heat olive oil in skillet and brown meatballs on all sides. remove and keep warm.
  • 3 add onion to skillet and cook until tender and beginning to brown.
  • 4 add minced garlic and cook for about 2 minutes more.
  • 5 add flour, mix well, and cook until beginning to brown. add beef broth, stir well, and cook until slightly thickened.
  • 6 add pepper, worcestershire sauce, and mushrooms, and cook until mushrooms are tender.
  • 7 stir in yogurt, then add meatballs.
  • 8 cook until heated through, but do not boil.
  • 9 taste sauce and correct seasonings, if necessary.
  • 10 one serving is 1/4 recipe and 3/4 cup brown rice.
