Easy Skillet Lasagna Recipe

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 1/2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 1 cup mushroom, chopped
  • 2 garlic cloves, minced
  • 1 (14 1/2 ounce) can diced tomatoes, drained (i use petite)
  • 1 cup tomato sauce (i use ragu chunky tomato garlic and onion)
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup skim milk ricotta cheese
  • 1/2 cup part-skim mozzarella cheese
  • 3 tablespoons parmesan cheese
  • 6 ounces ziti pasta (fully cooked)
  • 2 tablespoons parsley (dried or fresh)

Recipe

  • 1 heat oil in large nonstick skillet over medium high heat. add onions and cook until softened, about 4 minutes.
  • 2 add garlic and mushrooms and cook until garlic is fragrent, about one minute. add tomatoes, tomato sauce, salt and pepper. cook mixture until it thickens up a bit, around 5 minutes.
  • 3 add noodles to skillet and stir well. add scoops of ricotta cheese over noodles; add in mozzarella and parmesan. stir in parsley. cook two minutes, or until mixture is thick.
