Hot Chicken Salad

Ingredients
- 2 cups diced chicken
- 1 (8 ounce) can sliced water chestnuts
- 3/4 cup mayonnaise
- 1 cup cooked rice
- 3/4 cup diced onion
- 3/4 cup diced celery
- 1/2 cup sliced almonds
- 1 (10 3/4 ounce) can condensed cream of mushroom soup
- 4 ounces ritz crackers, crushed (1 sleeve)
- 4 tablespoons butter
Recipe
- 1 saute onion and celery.
- 2 mix all ingredients (except ritz crackers and butter) together in an oven-safe bowl.
- 3 sprinkle crushed ritz crackers over mixture.
- 4 drizzle melted butter over the top.
- 5 bake at 375 degrees for 20 to 30 minutes.
- 6 serve with your favorite crackers (club, etc.).
