Easy Mushroom Rice Pilaf

Ingredients
- Servings: 4
- 1 cup brown rice
- 2 cups broth (i used chicken broth)
- 4 ounces chopped fresh mushrooms (1 1/4 cups)
- 2/3 cup chopped onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- 2 garlic cloves (minced)
- 1/8 teaspoon pepper
Recipe
- 1 combine all ingredients in 3-quart saucepan.
- 2 bring to boil.
- 3 reduce heat to low.
- 4 cover and simmer for 50 minutes.
- 5 remove from heat and let stand, covered for 10 minutes.
- 6 stir and serve immediately.
- 7 enjoy!
